Mini Pumpkin Pie

I personally miss the fall season every year where the leaves dress up in warm earth colors varying from yellow to orange and brown. Though everything in nature seems to be dying, but in reality it is just a preparation to a new life.
In fact, November is all about giving thanks to all the blessings we have. It is also a month of baking pies, roasting turkeys, and savoring memories. I spend most of it trying different autumn recipes. This one is incredibly mouth watering and not very difficult to be made.

Crust pie:

1 1/4 cups flour
8 tablespoons butter
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 cup ice cold water

Mix the butter with the flour to form crumbs.

Add the other ingredients and knead until you get a soft dough.

Spread the dough using a rolling pin and cut 7 thin medium sized circles.
Insert the circles into a greased muffin tin.

Bake for ten minutes until the crust turns golden in color.


2 eggs
2 cups mashed pumpkins
3/4 cup sugar
3 tablespoons Greek yogurt
1 tablespoon cinnamon powder
1/2 tablespoon ginger powder
1/2 teaspoon salt
Cloves and nutmeg to taste


Beat the eggs along with the spices and salt.
Add the sugar and continue mixing until fluffy.
Add the pumpkin puree and yogurt.
Fill in the tin cups until the dough is completely covered.

Bake in a preheated oven for 20 minutes or until the filling is set. You can serve it warm along with a scoop of vanilla ice cream.

Italian Flan

The Italian mood still lingers in me, and for today I will share with you the following Italian recipe which we have enjoyed during our stay at mommy’s house. Like all my other recipes, this one is also easy and deliciously mouth-watering.



20 grams butter, melted                                        
2 tablespoons olive oil

2 medium onions, thinly sliced                               
6 eggs slightly beaten

¾ cups grated parmesan cheese                           
 1 small zucchini, thinly sliced

1 tablespoon shredded fresh basil

Using a brush, grease a round cake or pie pan with the melted butter and set aside.

Heat oil in another pan and add the onions.

Cook while stirring until the onions are soft.

Set aside to cool.

Combine, eggs, basil, cheese, zucchini, and onions in a bowl and mix well.

Pour mixture into prepared pan.

Bake in moderate oven for 30 minutes or until lightly browned and set. And that is it.
This flan is very appealing if you are hosting a brunch. Bon appetit!

Water Detox

Detoxification implies cleansing the body and cellular regeneration. As I have previously mentioned in the article “The Benefits of Water”, water helps the body in getting rid of harmful toxins, adding some fruits and vegetables to your water will help in detoxifying the body by removing impurities from the blood in the liver.

Unhealthy food and drinks put a lot of stress on the internal organs.  Peter Bennett (N.D., co-author of 7-Day Detox Miracle with Stephen Barrie, N.D., and Sara Faye) suggests that everyone should detox his/her body once a year.  It is important to note that in case you decide on a detox program, it is essential that you do it with a trained medical provider.

I personally have never followed a detox program, but I do enjoy adding some flavours to my water especially that I do not drink any type of bubbly drinks. That is why, I thought of sharing a few guidelines that you might find effective, especially during the summer vacation where water is the only element that quenches the body’s thirst and revives it.

Here are three tasty and healthy water recipes that you can do at home. It is preferred that you select organic vegetables and fruits for your drink to maintain a nourishing choice.

  1. The Flat Tummy Water: This is very similar to lemonade except that it has no sugar.

6 cups filtered water

1 Tablespoon grated fresh ginger (Ginger root has anti-inflammatory compounds and aids in digestion)

1 lemon sliced (Lemon juice contains pectin, a soluble fiber that has been shown to help with weight-loss. Lemon juice also helps get rid of the toxins in your body that cause you to keep weight on. Lemon also has a ton of Vitamin C –

1 cucumber sliced

1/3 cup mint leaves

  • Let the mixture infuse overnight and drink all the next day.

Fat Burning Detox Drink ( )

This mixture has a peculiar taste, but one can get used to it.

355 ml of water

1 to 2 tablespoons organic apple cider vinegar

1 tablespoon fresh lemon juice

1 teaspoon cinnamon (Cinnamon is highly nutritive as it is rich in fiber, iron, manganese, calcium, and helps lose body weight.)

1/2 teaspoon organic honey

Half of an apple sliced

  • Put all the ingredients in a blender and blend for about 10 seconds
  • Add the sliced apples
  • Drink and then eat the apples.

3. Raspberry Blast

Fill a 1 litre pitcher with water

Add 500 grams of raspberries (Raspberries contain anti-inflammatory phytochemicals that are anti-aging and anti-cancer.)

  • Have it soak overnight and drink it in the morning

The water will directly become red in color, but the next day it will look more like this.

To give this recipe a twist and to please yourself, you can replace water with sparkling water.

There are infusing bottles in the market, also sold online by amazon, that help in preparing detox water which I find practical and can be taken along with you even if you are not home.

Grandma’s Apricot Jam

When it comes to having sweets, children of this generation have a vast variety of chocolate bars, candies, jelly beans, and many other unhealthy options. Being a mom who follows up with the amounts of sugars my children get, I always try to offer them some traditional homemade sweets where they can learn about how the older generations used to prepare their own at home.

My grandma’s apricot jam was a great success and the boys even ask to have them as sandwiches which they sometimes take to school. I was delighted to learn that they enjoyed it especially because neither coloring or preservatives are used.

This kind of jam is done in June, where a specific type of apricots are chosen to be cooked in big pots and stored to be used later in winter times.



For every 1 kg of diced apricots you will need a 1/2 kg of sugar

1 teaspoon of lemon juice

Clean and dry jars with lids

Melted candle for sealing


Combine all ingredients in a big pot.

Do not stir as shown below.

Cook over low heat until sugar dissolves.

Over medium heat, bring to boil for around 20 minutes.

Stir occasionally until all bubbles disappear.

Continue to stir without stopping for around 10 minutes or until you get the consistency needed.

Remove from heat and fill in the jars.


Melt candles in a pan.


Using a tablespoon cover the top of the cooled jam with the melted candle.

Once the melted candle cools and hardens again, close the jars firmly and store them for later usage.

Note: 1 kg of apricots makes approximately one jar or more, depending on the jams’ consistency.

Salmon Pie

My passion in the kitchen is not only limited to baking cakes and preparing cookies, but I also enjoy cooking flans, different types of quiche and pies! Here is a simple yet delicious salmon pie recipe;

5 onions cut in wings

1 whole diced leek

1/2 a cup of milk

1 tablespoon flour

3 eggs

300 grams of grated yellow cheese ( I use a mix of emmental, babybel, cheddar)

Seasoning to taste: a dash of salt, fresh ground pepper, turmeric, cinnamon, ginger powder

250g salmon baked fillet

I usually marinate the salmon fillet in the following ingredients;
1 squeezed orange
1 tablespoon grain mustard
1 teaspoon honey
1 tablespoon olive oil
3 cloves of garlic

Salt, pepper, and ginger powder

Bake in the oven until cooked.


Flake the fish and set aside. The interesting part, is that you can use leftovers of a salmon fish from the night before. In this case, I would heat the flakes of fish using a knob of butter.

Now that the salmon is ready, spread the ready made pie crust in the desired pan. Cover with wax paper and add some beans on top. Bake in a preheated oven until the sides become a bit golden in color. (around 20 minutes) I usually use Marie or Carrefour brand for the puff pastry.


Now for the filling. Cook the onions in some cooking oil or butter until caramelized. Add the leeks and continue cooking for five more minutes. Set aside to cool. Beat the eggs along with the peppers until fluffy. Add the flour, milk, and some of the grated cheese. Fold in the onion mix.  Fill in the crust with the mixture. Sprinkle more of the cheese on the top.


Bake in a preheated oven until the eggs mixture is set – around 25 minutes. Serve warm along with a green salad.

Peach Pie

If you are having a brunch or some friends over for a cheese and wine evening, here is a delicious and super fast recipe that I managed to create out of whatever combination I could find in my fridge. 😊


1 egg
Pinch of vanilla pod
Pinch of black pepper
100 grams whipped Philadelphia cheese or goat cheese
150 grams honey and pecan Philadelphia cheese
1 puff pastry roll
3 peaches



Beat the egg along with the vanilla and black pepper. Fold in both types of cheese.
Spread the ready-made crust in a round pan.
Prick the crust all over with a fork.
Spread the mixture.


Slice the peaches and line them on top of the pie.


Bake the pie for 30 minutes or until the crust is golden in color.


Cut a slice. Drizzle with some honey and enjoy!

Organic Chocolate Spread Muffins

The name of February comes from the Latin word februum which means purification as it was a time of redemption a very long time ago.
As this month softly settles in, people dwell into their emotions with ecstasy as they look for new ways to celebrate Valentine’s Day. Some plan on special romantic outings, others try to find unique gifts, while some prefer baking some peculiar desserts.
I came across a chocolate spread muffin recipe and thought it fits perfectly well for those who would like to surprise their loved ones with a nourishing treat during this month.
Being the meticulous mom that I am, I adjusted the ingredients to make it a healthy recipe for my family. It is light, not too sweet, and easy to make. Hope it will appeal to your taste.


1 cup of Organic Biona chocolate spread
2 medium eggs
10 tablespoons of all purpose flour
1/4 teaspoon vanilla
3 tablespoons of milk or yogurt
1/2 teaspoon baking powder
1/4 cup of semi-sweet chocolate chips



Preheat the oven
Line the baking cups in the muffin tray
Using an electric mixer, beat the eggs along with the vanilla until fluffy
Mix the Biona chocolate spread, the milk, the baking powder, and the flour until combined


Spoon the batter into the lines baking cups
Sprinkle the chocolate chips on top of each muffin


Bake for a maximum of 15 minutes
Let the muffins cool for 5 minutes before transferring them into a plate
Sprinkle some icing sugar on top
Serve and enjoy!
